Vegetable Chicken with Brown Rice

Number of Servings: 5-6

SMARTPOINTS PER SERVING: 7

Ingredients:

1 small zucchini, halved vertically and sliced thinly

1 red bell pepper, minced

1 chicken breast fillet, cubed

1 green pepper sliced

2 cups cooked brown rice

4 olives, pitted and chopped

1 garlic clove, minced

1 tablespoon dark or mushroom soy sauce

Zest and juice of 1 lemon

1 tablespoon apple cider vinegar

Ground black pepper and salt to taste

Directions:

In a saucepan or skillet, heat the oil over medium heat setting.

Add the chicken and stir-cook to evenly brown on both sides for 2-3 minutes per side.

Sauté the garlic and vegetables until it becomes softened and translucent for 3-4 minutes.

Add the soy sauce and stir-fry for 1 minute. Take it off heat.

Add the mixture to a bowl and add the rest of the ingredients. Toss well.

Serve warm.
